Peas and Carrots Sandwich Recipe

Peas and carrots sandwiches are quick, refreshing and fast.  You can add some cold cuts to the sandwich or even tofu or tuna for some protein.  I also sometimes use a can of mixed vegetables (which also have peas) when I’m in a pinch, that way the sandwich is ready even faster!

Ingredients:
- 1.5 cups carrots, grated
- 1 can of green peas (or frozen peas cooked)
- 1/4 cup mayonnaise

Directions:
1. Mix together all of the ingredients
2. Season with salt and pepper
3. Spread it onto your sandwich. Yum!
